Remake of Panera Mediterranean Salmon Salad

MONDAY
Poach Salmon the night before, store in fridge.

Ingredients:
2 2 oz salmon fillets (preferably Pacific caught)
mixed salad greens (I prefer mesclun and romaine for this.)
kalamata olives
mandarin oranges
sliced almonds
feta cheese
handful grape tomatoes

*I'm going to make my own salad dressing made of just one juiced orange and a tsp of honey.

Serve with fresh homemade baguette.
